Equipment

  • Parchment Paper

Ingredients

  • 2 Filets of Swai
  • 1 cup green beans frozen or fresh
  • 1/3 cup grape tomatoes halved
  • 1/2 lemon thinly sliced
  • 1/2 red onion or shallot thinly sliced
  • 1/2 tsp citrus garlic seasoning or All Purpose Seasoning
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1-2 tbsp olive oil
  • salt + black pepper
  • 2 tsp unsalted butter

Instructions

  • Preheat oven to 400 degrees F
  • To parchment paper, place fish filet diagonally (so when folded the paper creates a triangle.)
  • Add a drizzle of olive oil, salt, pepper, onion powder, garlic powder, citrus garlic seasoning, and smoked paprika to both sides of the fish.
  • Add green beans under and around the fish. Then sprinkle thinly sliced red onion or shallot, halved grape tomatoes over the fish.
  • If using frozen green beans, you can add them directly. If using fresh green beans, you may want to blanch them quickly in boiling water for a few minutes to partially cook them before adding them to the parchment.
  • Drizzle a little more olive oil over the vegetables and lightly season them with salt and black pepper, all purpose seasoning and garlic powder.
  • Bring the edges of the parchment paper together by twisting the ends, creating a sealed pocket around the fish and vegetables. Make sure the pocket is tightly sealed to trap the steam inside.
  • Place the parchment packet on a baking pan and transfer it to the preheated oven.
  • Bake for 20-25 minutes, or until the fish is flaky and the vegetables are tender. Cooking times may vary slightly depending on the thickness of the fish filets.
  • Once cooked, carefully cut open or unwrap the parchment paper packet. Serve the fish with the vegetables and enjoy!

Notes

Note: If you prefer a buttery flavor, you can add 1 teaspoon of unsalted butter on top of each fish filet before sealing the parchment packet in step 8. This will melt and add richness to the dish while it cooks.
