I’m officially in a fall kinda mood and craving all things warm, cozy and delicious. Let me not lie, I’ve been in a fall mood since August 1st. What can I say, it’s my favorite season.

As soon as the seasons change, I’m instantly inspired to play in different flavors. These Apple Crumble Muffins are inspired by my berry cobbler muffins and blueberry streusel muffins but with a fall twist.
Pumpkin gets all the love during the fall, and it’s time to change that. These Apple Crumble muffins are a great start. If you are new here, I’m sharing a series of Non pumpkin recipes perfect for fall.

Apple picking is very popular up north. I figured this recipe would be perfect to share now. We are transitioning into fall. This is the perfect way to use up all those delicious apples this fall.

Ingredients for these Apple Crumble Muffins
here’s what you’ll need to make the Apple Crumble Muffins:
for the apples:
- Granny smith apples: feel free to use honey crisp or Gala apples.
- Spices: apple pie spice, cinnamon, nutmeg
- brown sugar: I prefer using light brown sugar for muffins.
- vanilla extract or vanilla bean paste
- unsalted butter
- Lemon juice
wet ingredients
- eggs: room temperature
- vanilla extract: vanilla bean paste.
- butter: unsalted butter, browned.
- Greek yogurt or sour cream: Adds a subtle tangy flavor to the muffins and helps make them incredibly moist.
- buttermilk
dry ingredients
- All Purpose flour
- granulated sugar
- baking powder
- cinnamon and apple pie spice
- salt

For The Streusel Topping
- Flour
- Oats
- Sugar: both brown and granulated sugar.
- Butter
- Cinnamon
The Secret To Moist Muffins?
- use Greek yogurt or sour cream. Depending what I’m baking, I use them interchangeably. But these give the most moist muffins.
- don’t over mix the batter. The more you mix, the more gluten is formed, and the tougher the muffins will be.
- slightly under-bake. Under-baking huh? Yes, just slightly. Once you remove them from the oven they will continue to bake as they cool. Over-baking will result in a tough, dry crumbly muffin.

How to store?
This recipe makes 12 standard muffins. I recommend storing them in an airtight container in the fridge. You can also freeze the muffins once the come to room temperature. Put them in a plastic bag and freeze.

Apple Crumble Muffins
Equipment
- cupcake sheet
- parchment cups
Ingredients
- 2 cups AP flour
- 1 tbsp baking powder
- ½ tsp salt
- 1/4 tsp apple pie spice
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs room temp
- 3/4 cup unsalted butter browned
- 3/4 cup plain greek yogurt
- 1/3 cup buttermilk
- vanilla measure with your heart
For the apples
- 2 apples peeled and diced
- 2 tsp granulated sugar
- 1/2 tsp apple pie spice
- 1/4 tsp cinnamon
- 1/2 lemon juice
crumble topping
- 1/2 cup oats
- 1/2 cup AP flour
- 1/3 cup brown sugar
- 1/4 cup unsalted butter
- 1/4 tsp apple pie apice
- 1/4 tsp salt
- powdered sugar for topping optional
Instructions
- Preheat oven to 400 degrees. Grease muffin tins and line with parchment paper or cupcake liners. Set aside.
For the streusel
- In a mixing bowl, combine the streusel ingredients using a fork or your hands until the mixture forms a crumbly texture.
- In a separate bowl add diced apples. Season with granulated sugar, cinnamon, apple pie spice and lemon juice. Mix until each apple piece is coated and set aside.
For the muffin batter
- In a saucepan, add unsalted butter and begin to brown over medium heat. Stirring constantly until the butter foams and turns golden brown. Make sure to only brown the butter lightly. As soon as the butter smells nutty and turns brown remove from the heat. Allow the butter to cool to touch before using.
- In a large bowl combine browned butter, brown sugar, granulated sugar. Then add in the eggs, greek yogurt, buttermilk, and vanilla.
- In a separate bowl, combine flour, baking powder, apple pie spice and salt. Add the dry ingredients into the wet ingredients. Mix until just combined, the batter will be thick. Next, fold in the spiced apples.
- With a large ice cream or cookie scoop, scoop the batter into the prepped muffin tins filling them 3/4 of the way.
- Top the muffins with the streusel topping.
- Bake the muffins at 400°F for 5 minutes, then reduce the heat to 375°F and bake for an additional 20-25 minutes, or until the muffins are golden and a knife inserted comes out clean.
- Remove from the oven, top with powdered sugar. serve warm & enjoy!
